Flourless Pumpkin Bites

It is the first official day of fall, yay!! With that being said, todays post is all about my favorite flourless pumpkin pie bites. As you know, I'm always on the hunt for the healthier option that still tastes amazing, and these do not disappoint. I have a secret love for all things pumpkin, which doesn't help out the waistline (insert covering eyes monkey emoji). So, I had to find a way to curb my craving without the calories.  

Please note, I accidentally left the nut butter out of this batch - Yes, I am human & cooking while people are watching may or may not make me nervous. In turn, the texture turned out different than usual, but they were still awesome, and actually less dense - so you can live without it!

Ingredients
1/4 cup nut butter (I use peanut butter, but almond butter works too)
1 can canned pumpkin
1 large egg
6 Tbsp honey
1/2 cup rolled oats
2 Tbsp ground flaxseed
1 Tbsp Chia seeds
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1 tsp vanilla extract
1/2 tsp baking soda
1/4 cup mini chocolate chips

Directions:
Preheat your oven to 375F and prepare a mini muffin pan by spraying 9 cavities with cooking spray or lining them with parchment liners. Set aside. Add all the ingredients to a high-powered blender and blend on high until the oats have broken down and the batter is smooth and creamy. Distribute the batter evenly among the muffin pan cavities. Bake for 20-23 minutes, until the tops of your muffins are set and a toothpick inserted into the center comes out clean. Allow about 10 minutes to cool before removing.
