Happy Monday! I hope everyone had a fantastic weekend. I think I blinked my eyes twice and it was over!

These are some of the best leggings I own (along with a couple others from Alo). I absolutely love the moto detailing - it gives off just the right amount of "edgy meets sporty" for the perfect athleisure look. I paired them with this deconstructed sports bra as it's still unusually warm here, but I can't wait to rock them with a hoodie/moto jacket combination in the fall (fav weekend attire). I also prefer the high waist in these (they come both ways), as it fits better for functional use when running or doing a high intensity workout. Crop tops at the gym are also all the rage lately! This one by Solow is fun and great quality - it's just pricey for the amount of material you get.

PS: This is a completely different topic, but if you've been keeping up with Charlotte in the news, you probably know things have been a little crazy here lately. You never truly realize what it's like to witness this type of outrage, until you see it first hand. So, if you're reading this, I'd like to challenge you to pay it forward this week, regardless of your location. Wether you buy the persons coffee infront of you at Starbucks, or simply lend a helping hand to a person in need - be the reason someone smiles today.

Flourless Pumpkin Bites

It is the first official day of fall, yay!! With that being said, todays post is all about my favorite flourless pumpkin pie bites. As you know, I'm always on the hunt for the healthier option that still tastes amazing, and these do not disappoint. I have a secret love for all things pumpkin, which doesn't help out the waistline (insert covering eyes monkey emoji). So, I had to find a way to curb my craving without the calories.  

Please note, I accidentally left the nut butter out of this batch - Yes, I am human & cooking while people are watching may or may not make me nervous. In turn, the texture turned out different than usual, but they were still awesome, and actually less dense - so you can live without it!

Ingredients
1/4 cup nut butter (I use peanut butter, but almond butter works too)
1 can canned pumpkin
1 large egg
6 Tbsp honey
1/2 cup rolled oats
2 Tbsp ground flaxseed
1 Tbsp Chia seeds
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
1 tsp vanilla extract
1/2 tsp baking soda
1/4 cup mini chocolate chips

Directions:
Preheat your oven to 375F and prepare a mini muffin pan by spraying 9 cavities with cooking spray or lining them with parchment liners. Set aside. Add all the ingredients to a high-powered blender and blend on high until the oats have broken down and the batter is smooth and creamy. Distribute the batter evenly among the muffin pan cavities. Bake for 20-23 minutes, until the tops of your muffins are set and a toothpick inserted into the center comes out clean. Allow about 10 minutes to cool before removing.

Chicago Recap & The Olive Playsuit

Ya'll, let me just start by saying this weekend was one for the books. If you've been following me here, or on social media, you're probably aware I spent the weekend in Chicago. This was my first time visiting Chicago, and I can honestly say - I absolutely loved it. We were only there for the weekend, which definitly wasn't long enough, but we made the most of the time we did have! The food in Chicago is phenomenal, I highly reccommend visiting RPM Italian, (ask for Dre as your waiter) and The Allis at Soho House - two of my favorites from our trip. Aside from food, we did the typical tourist attractions. We did a Architecture River Tour (worth it), went to a Cubs game, and saw the Bean. I feel so fortunate to have the opportunity to travel as much as we do, and to get to do it with some of my best friends this go around!

I posted this romper on Instagram last week, and wore it out to our first dinner at The Mercadito (great Mexican food) Friday night. Rompers are so hit or miss for me because I'm 5'8", most of them end up being way too short. This one however, was perfect. It comes in 3 colors but I noticed the Olive and Black have been selling out with Revolve, so I linked them from a few different retailers at the bottom of this post. Please note, I did have to size up to a Medium.

Drape Front Jacket

Hi loves! It's Wednesday, and we're halfway through the work week - yay! I am in love with all things olive/dark green right now, I swear half my closet is filled with this color crush of mine! Anyway, this drape front jacket is perfect for fall. It's lightweight, and cut from stretch crepe so you don't have to worry about it piling like a normal sweater or cardigan would. I also really like how it's tailored and has true form, but not overdone - it's still loose and flowy with breezy side slits. Unfortunately,  I've noticed as soon as it's restocked (yesterday) it sells out again right away (today). So I linked a similar version, but keep checking back as Nordstrom will likely restock soon! 

Side note, I got a ton of questions about the flourless pumpkin pie bites I posted on Snapchat (@vkrombe) Sunday -- I will do a full blog post for ya'll on those next week!

An Outfit to Wear Now & in the Fall

Good Morning & happy Monday! If you follow me on insta, you've probably seen I've posted this look a couple times already, but if it isn't broke don't fix it right!? Anyway, it was pretty popular amongst my followers so I decided to do an entire post on it. I love this outfit for so many reasons. It's trendy, it's comfortable, and it doesn't break the bank. This is how I am wearing it now, however it will be super easy to transition this into fall by adding a blanket scarf, closed toe booties, and putting the jacket on. I'm also super into hats right now, so this was the perfect addition for me - although it's too toasty in Charlotte at the moment to really be functional. This top also looks super cute tucked into high-waisted jeans, and it's a steal for a designer top! 

I hope ya'll had a great weekend! We went to Beaufort, NC for a friend and co-workers wedding! If ya'll ever make it down there, you must try out Beaufort Grocery for dinner! The rehearsal dinner was held there, and the food is ahhh-mazing.

Burgundy Tank Dress








Ya'll, it's already Tuesday! I love a short work week, but then again who doesn't right!? This dress had me at Merlot! Every fall, this color always turns out to be one of my color crushes, and this year is no exception. It just reminds me of all the colors you see in the changing leaves around the mountains, and how cute is it paired with grey!? 

What did you guys do for LDW? I spent the weekend in Seattle visiting my parents, and I was completely spoiled! The weather was fantastic, and there's just something about being "home" that doesn't compare to anything else. I must say, my Keurig this morning was no comparison to Mama's French Press coffee! 

PS: Did any of you watch the Clemson game!? I'm SO excited for this season, but they sure did almost give me a heart attack Saturday night!
